There is no doubt that in this case the correct size for the Giant Defy Advanced Pro 1 road bike is the ML.

In fact, I don't think he should make any particular adjustments to the set-up of the bike as it comes out of the shop.

Size L could only be taken into consideration with the desire to create a very "racing" set-up, but at this point it could be too uncomfortable and tiring.

Overall, however, the correct choice is the ML size and then proceed with any modifications to the set-up, possibly with a stem longer than one centimeter.

His Scott, however, had a stem that was too short for his height, so I reckon the size ran a little large.

With these considerations, therefore, I really think that the ML is the best choice to make and then make the necessary adjustments, which as far as I'm concerned, in your case, should be zero.
