The correct size of the Canyon Endurace endurance bike, in my opinion, is the S, which corresponds approximately to your current bike (size 54).

The difference is that the Canyon has a higher head tube, so it will have a less sloping torso.

Since she is at the limit of this size, she could also choose size M, but at this point the bike would become large and the riding position not suitable for an Endurance bike, that is, with the torso very leaning forward.

If you feel comfortable with the current bike and want greater ride comfort, the solution is size S, otherwise, perhaps it is good to change the frame.
